Wicked fluffy blueberry griddle cakes

Wet ingredients:
2 eggs
2 cups and 2 TBS buttermilk
6 TBS melted butter
1 tsp vanilla extract

Dry ingredients:
2 cups bleached all purpose flour (loosely packed)
5 TBS granulated sugar
1 TBS baking powder
1 tsp salt

1.5 cups blueberries

Instructions: 
Combine all of the dry ingredients in a bowl and whisk together.

In a separate bowl whisk the 2 eggs until whites and yolks are fully combined.  whisk in the buttermilk and vanilla.  melt the butter and then let it cool slightly and then whisk in as well.

Slowly add about 1/3 of the wet ingredients to the dry and gently fold the mixture together.  add another 1/3 and repeat folding.  add the last 1/3 and repeat folding. 

don't overmix the batter.  after  you finish folding you will still see some lumps and that's OK. if you see any large lumps (bigger than a pea) break them up with a fork.

cover mix and let rest for 15 mins. 

slowly add the blueberries and fold them in. 

Cook on a well buttered griddle over medium low heat.

Pork:
2 to 2.5lb pork sirloin
4 cups water
1/4 cup salt
1/4 cup sugar
2 tsp cumin
2 bay leaves
2 TBS paprika
1 TBS thyme

Bring 2 cups off water to a boil then add the salt, sugar, cumin and bay leaves.  stir until dissolved.  turn off heat and add the other 2 cups of water.  let it cool to room temperature.  Pour into a large lidded bowl and submerge the pork roast in it.  cover and refrigerate overnight. 

Remove from brine and pat dry with a paper towel.  Rub paprika and thyme all over and then wrap with cling wrap.  refrigerate for at least an hour. 

Remove from refrigerator 30 mins prior to cooking.  Preheat oven to 350Β°F.  Heat a large skillet on medium-high heat.  Add 2 tbs of oil and sear all sides of the roast for 1-2 mins per side.  After all sides are seared add 2 tbs of butter to the pan.  If your skillet is oven safe place the whole skillet in the oven and bake for 45-60mins or until internal temp is 145Β°F.  If your skillet isn't oven safe then transfer to a baking sheet.

Cheesy BBQ Chicken Sandwiches

Sauce:

3/4 cup ketchup
3 TBS palm sugar ( or brown sugar)
3 TBS maple syrup
2 TBS soy sauce
1 TBS sriracha sauce (2 if you like it extra spicy!)
1 TBS rice vinegar (or apple cider vinegar)
1 TBS mirin wine (or cooking sherry or marsala)
1 tsp garlic powder
1/2 tsp oregano

Other ingrdients:

2 chicken breasts sliced into 1/8" thick pieces
1 cup shredded mexican cheese (or colby jack)
1 package potato buns

Instructions:

Make the sauce.  Fry up all the chicken in batches.  Return all chicken to the pan and add 1/3rd of the sauce.  Cook on medium high until the sauce caramelizes and starts to stick to the chicken.  Add the rest of the sauce reduce heat to medium.  Bring to a simmer and let the sauce thicken for a few minutes.  Turn off the heat and immediately fold all of the cheese in. 

Serve on the potato rolls with a side of your favorite fries!

Chicken Pot Pasta

Ingredients
2 chicken breasts (about 1.5lbs)
1 bag pappardelle pasta 
4 cups chicken stock
1 cup carrots diced into ¼” cubes
Β½ cup carrots finely diced
2 stalks celery sliced into ¼” half moons
Β½ cup celery finely diced
1 cup green beans cut into 1” lengths
1 cup of leek sliced into ¼” circles
Β½ cup yellow onion finely diced
2 cloves garlic diced
1 stick of unsalted butter
4 TBS All Purpose Flour
ΒΌ cup heavy cream
Salt and pepper

This recipe uses 2 pots, a stock pot for the pasta, and either a large skillet, a saucier pan or another stock pot for everything else.  You will also need a heat proof glass bowl and a strainer.

Do all your prep first.  Wash and cut all the vegetables.  You can group all of the finely diced veggies in one bowl. Keep the garlic separate, and the green beans separate.  Throw the carrots, celery and leeks directly into your pan.  Slice the chicken into roughly 1” wide strips and remove any chewy parts then set aside. 

Cover the carrots, celery, and leeks with the 4 cups of chicken stock.  Turn on high and bring to a boil.  Boil until carrots are fork soft.  Pour everything through a strainer into the heat proof bowl. 

Get your pasta water boiling in the other pot.

Cover the bottom of the same pan you cooked the veggies in with a single layer of chicken, then add the green beans.  Pour the chicken stock from the bowl back into the pan.  It should completely cover the chicken.  If not, add a bit more stock or slice the chicken thinner.  Return to a boil and boil until chicken reaches 160Β°F.  Strain everything again and set aside.

In the pot you used to cook the chicken, bring it up to medium high heat.  Add 2 tbs of avocado or vegetable oil and then add all of the finely diced vegetables and some salt and pepper and cook until they are very soft and almost disintegrating. If they start to brown, reduce the heat or add more oil.  Add the garlic and cook till fragrant ~60s. Reduce heat to low.

Add the pasta to the other pot. Set your timer per package instructions for al dente.

Add 2 TBS salted butter to the vegetables

After the beans have sat for 2 hours. Transfer them and any remaining liquid to a large bowl.Β  Return the pot to the stove and heat over medium high heat.Β  Add 2 TBS avocado or vegetable oil.Β  Add the onions and the garlic and cook until nicely browned.Β  Turn off the burner and slowly add the beans back to the pot.Β  Fill with enough water to just cover the beans.Β  Add 2 tsp cumin and 2 bay leaves per pound of beans.Β  Bring to a boil, cover, reduce heat and simmer for about an hour or until the beans are soft and most of the water has evaporated.Β  Taste test once the beans are soft enough to chew and add any additional salt as desired.

Simple Brine Recipe:

Bring 2 cups of water to a boil.  Add 1/4 Cup Kosher Salt and a 1/4 Cup Sugar.  Boil until salt and sugar are dissolved. Remove from heat.  Add an additional 2 cups of water to cool mixture.  Allow to come down to room temp before adding pork.  Cover and refrigerate.  2 hours is long enough for thin pork chops.  3 hours for thick cut.  Overnight for a roast or tenderloin. 

Feel free to spruce it up!  I like to add 2 tsp of cumin and a couple of bay leaves while its boiling!

Steak Marinade

1Β½ lbs skirt steak

2 tbs avocado oil

Juice of 1 lime

4 cloves garlic minced

Β½ white onion diced very fine

1 tsp salt

1 tsp cumin

Mix everything together well in a gallon ziplock bag and let marinate in refrigerator for 1-2hrs.Β Β 

Cook steak to medium (140-145Β°F) let rest for 5 mins then slice across the grain to serve.

Black beans

Sort and clean the beans.Β  Rinse well under cool water.Β  Place in a pot and fill with enough water to cover the beans by Β½ β€œ.Β  Add 1 tsp salt for every pound of beans.Β  Bring to a boil, turn the burner off, cover and let sit for 2 hours.Β Β

Ingredients
1 lb Chicken Breast Sliced
1 TBS Adobo 
4 cloves garlic minced
1 serrano pepper minced
(see spicey options below)

1 Sweet Onion sliced in rings
1 Green Pepper sliced in strips
2 Tsp Cumin
1 Tsp Paprika
1/2 Tsp turmeric.

In a large skillet or saucer pan heat 2TBS of high smoke point oil (i use avocado) over medium high heat. Add the peppers and onions and cook stirring frequently.

Coat the chicken with the Adobo and a drizzle of oil.  in a separate skillet cook over medium heat in batches until just done.  Return all the chicken to the pan and add the garlic and serrano.  Cook for 2-3 mins and remove from heat.  For MILD remove all the serrano seeds.  For MEDIUM remove half the seeds.  For HOT leave all the seeds.

when the onions and peppers are soft and starting to brown, add the cumin, paprika and turmeric.  continue cooking for 4-5 mins.  deglaze the pan with 2 TBS water and then remove from heat. 

Serve in a warm tortilla with sour cream and guacamole with a side of rice!

Chicken & Marinade

1.5 lb Chicken Breast cut into 1.5” chunks
1 cup Plain Greek Yogurt
1 tsp Turmeric
1 TBS garam masala
1 tsp paprika
1 tsp dried ginger
1 TBS lemon juice
1 tsp salt
1/2 tsp pepper

Sauce

1 white onion diced
1 green bell pepper diced
1 serrano pepper diced (x2 for extra spice!)
2 tsp fresh grated ginger
2 cloves of garlic diced
ΒΌ cup ghee or unsalted butter
4 tsp garam masala
2 tsp paprika
1 tsp salt
28oz can peeled tomatoesΒ 
3/4 cup heavy cream
1 cup chicken stock

Cut the chicken into chunks and mix the marinade ingredients together.Β  Mix the chicken into the marinade, cover and place in refrigerator for at least 1 hour.

Preheat oven to 450Β°F

Cut and dice all the vegetables, grate the ginger.Β  Melt the ghee in a large skillet or saucier pan over medium heat.Β  Add the pepper and onion and cook until soft and translucent then add the ginger and serrano pepper, reduce heat to medium low and continue cooking until a nice caramel color is achieved.Β  This can take up to half an hour.Β  Don't burn it, take your time and stir frequently.Β Β 

While you're waiting, open up the can of peeledΒ  tomatoes and break them up with your fingers.Β  Remove any unripened or hard bits and set aside.

Once everything is caramelized add the garlic and the spices and cook for 1-2 minutes, then add the tomatoes and the chicken stock and stir well.Β  Bring to a simmer and then remove from heat and set aside.Β Β 

Place a baking rack on a cooking sheet and evenly space all of the chicken.Β  Place in oven for 8-10 mins or until the internal temp is 165Β°F.Β Β 

While the chicken is cooking, pour the sauce mixture into a blender and blend until smooth.Β  Add the heavy cream and blend until combined.Β  Return sauce to pan and reheat on low.Β Β 

When chicken is done cooking, place chicken chunks into sauce and mix well.Β 

Serve over basmati rice with a side of naan bread!

Ingredients

4 slices bacon
1 head of cabbage
3 tablespoons of sugar

Preheat a deep skillet or wok over medium heat. 

Slice cabbage along the stem direction into 1/4" wide strips.  Remove any really thick pieces as they dont like to soften up. 

Fry the bacon until extra crispy, remove from the pan and then add in the cabbage.  Stir to coat in bacon grease and the continue cooking, stirring occasionally until cabbage is soft and slightly browned. 

Chop up the bacon into bacon bits and add back into pan with the cabbage along with 3 TBS of sugar.  Stir well and continue to cook for 2-3 minutes. 

Serve with any of your summer favorites!

Ingredients:
1lb boneless chicken breast
1 cup all purpose flour
2 tsp. kosher salt
1 box penne pasta
2 shallots
2 cloves garlic
4 TBS butter
2 TBS olive oil
4 TBS tomato paste
1/2 tsp dried basil (optional)
1 TBS granulated sugar
28oz can San Marzano Peeled Tomatoes
1 cup heavy cream
1/2 cup grated parmesan reggiano 

Instructions 

Peel and dice the shallots and garlic. set aside in separate bowls.

Slice the chicken into 1/8" thick strips about 1" long.  Whisk flour and salt together in a bowl and dredge the chicken in it.  Set aside on a plate. 

Pour the can of San Marzano's into a large bowl and squish all of the tomatoes with your hand.  Remove any hard or unripened bits.  Set aside.

Preheat a saucier pan or large skillet over medium heat.  Add 2 TBS of butter and 2 TBS olive oil.  Then add the shallots.  Cook until soft and transluscent.  Stir frequently to prevent browning.  Once translucent add the garlic and cook till fragrant. 

Add the tomato paste and stir to combine.  continue cooking until the paste has formed a deep red color.  Add the San Marzano's and stir till combined.  Bring sauce to a simmer.  Taste test and add the basil, sugar if needed.  This is also a good time to add salt and pepper if desired.  Turn burner off and let cool slightly.

Cook pasta till just al dente per the package instructions.  Drain the pasta, reserving 1 cup of pasta water.  Add the remaining 2 TBS butter to the pasta to prevent sticking.

Preheat a large skillet over medium heat.  Add 1/8" of cooking oil to the pan.  Cook the chicken in batches until just done and golden brown. 

Pour the cooled sauce into a blender and blend until smooth.  Add the cup of heavy cream and blend until combined then return it to the pan.

Bring sauce back to a simmer and add in the chicken and parmesan reggiano.  Stir well and continue cooking until all of the cheese is melted and everything is nice and hot.

Toss the sauce and chicken with the pasta.  Use the reserved pasta water to thin if necessary.

ingredients

1lb sirloin steak
1 small yellow onion
2 cloves garlic
4 TBS all purpose flour
2.5 C beef stock
1/8 C heavy cream
1 package egg noodles
1/2 stick butter
sour cream 
salt and pepper

instructions
dice the onion and garlic.

slice the beef into 1/8" thick slices across the grain.  season with salt and pepper.

in a large skillet over medium high heat, sear the beef on each side.  this goes quick as they are very thin.  remove from pan. 

add onion to the pan and cook until transluscent.  scrape up all the browned bits from the beef.  then add the garlic and cook till fragrant ~60s.

add the beef back to the pan. mix well with garlic and onions.  add the flour and stir till combined well.  add the beef stock.  stir till combined.  bring to a boil then reduce heat and allow to thicken a bit. 

stir in the heavy cream.  taste test.  add any additional salt or pepper.  remove from heat. 

boil the egg noodles till al dante, drain and stir in 1/2 stick of butter. 

serve the beef and gravy over the egg noodles and garnish with sour cream.
