This is our take on the other sandwich sauce that comes in a can, starts with M and ends in wich. I’ve never been a big fan of how it tasted but I loved the idea of it. Just fry up some beef, add the sauce and BAM dinner! Michelle and I decided that having a super quick and easy meal in the rotation would make life a lot easier on busy nights. So we set out to make our own “meal in a can”. Not an exact replica, but definitely in the same spirit. It had to be a little bit sweet, a little bit tangy, a little bit spicy and have tons of great flavor.
What we came up with is something I never could have imagined. It took us many, many attempts to get it just right and has quite a lot of different ingredients, but it’s DELICIOUS! Like unbelievably delicious. It’s so good, I could eat this almost every night. In the instructions below I’ll teach you the “baking soda” trick to use when frying ground beef. It’s something I didn’t believe at first, but once I tried it, I’ve never gone back. Adding the baking soda helps tenderize the beef and prevents all of the moisture from being squeezed out. This let’s you get it browned up nicely without drying it out. I use this trick every time I fry up ground beef and you should too.
This meal is perfect for those hectic nights when you just don’t know what to cook. You can whip these up and throw your favorite french fries in the oven and be done in 20 mins. Everyone will love them, I promise!
What Type of Roll Should I Use?
You can use any roll you like, but the softer and squishier the better in my opinion. I like to serve the Mega Murphwich on potato rolls like these here from pepperidge farms. They are my absolute favorite. Big enough to make a mega sandwich but still soft and squishy and a little bit sweet. Try them out, you won’t be disappointed.
What Are All of Those Ingredients I’ve Never Heard Of?
You’ll see a couple of not so common ingredients included in this recipe. Specifically rice vinegar, mirin wine, and coconut palm sugar. These are ingredients that I always have in the cabinet. They are great for cooking and adding flavor to all kinds of dishes. Here are some pictures of the brands I use. A Few Helpful Hints!
- Take your ground beef out of the refrigerator 20 mins before you’re going to start cooking. You want it to get almost to room temperature.
- If you’re in a rush, or you have a very cold refrigerator, flatten the beef in a thin layer around the inside of a bowl. This will let it warm up faster. You can even put that bowl in another larger bowl and fill the outer bowl with some warm water.
- Watch out with the siracha sauce. I always use the original Huy Fong brand and have found the spicy level can vary sometimes from bottle to bottle so I would err on the side of less siracha in the marinade and then add a bit more at the end if you want it hotter.
- This recipe goes pretty quick so if you’re going to make some french fries start preheating your oven a bit before you start cooking and throw the fries in once you’ve finished making the sauce.

Prepare the Ground Beef
Place the ground beef in a large glass or metal bowl. A little bit at a time, add the baking soda, mixing thoroughly with your hands every time you add more. Make sure it is mixed well. Set aside and let sit for 10 mins while you make the sauce.

Prepare the Mega Murphwich Sauce
Mix all of the Mega Murphwich Sauce ingredients together in a medium bowl. Set it aside.

Other Prep
Preheat your skillet on medium heat. This is also a good time to throw your fries or other sides in the oven!
Cooking Instructions

Cook the Beef
Add 2 TBS of high smoke point oil to your preheated pan (I use beef tallow). Add all of the beef to the pan. Every few minutes flip, stir and chop up the beef with your spatula. Continue doing this until all of the beef is cooked through and brown. Be sure to break up any large chunks into smaller crumbly bits. Drain off any excess liquid.
Reduce heat to medium/low and slowly combine the sauce into the beef. Continue cooking, stirring frequently until all of the sauce is hot and starts to thicken a little. Turn the burner OFF then immediately add the shredded cheese, using a spatula to fold it into the mixture until fully combined.

Pile up a nice big heap of the mixture on your favorite hamburger bun. Toss some fries or tots on the plate and enjoy!
