Why Add Baking Soda to Ground Beef?

Coconut sugar brings a darker, caramel-like flavor, although light brown sugar works if that is what you have. The amounts are small, but together they make the sauce taste more balanced and complete.

3TBS Coconut Palm Sugar (Light Brown Sugar is Fine as Well)
1 to 2TBS Huy Fong Siracha Sauce (Any Brand Will Do Though)
3TBS Real Maple Syrup (You Can Use the Fake Stuff if it's All You Have)
2TBS Soy Sauce
1Tsp Rice Vinegar

1Lb 85/15 or 90/10 Ground Beef

Prepare the Ground Beef
Place the ground beef in a large bowl. Combine the baking soda and water, pour the mixture evenly over the beef, and gently mix it with your hands until it is distributed. Let the beef rest for 15 minutes while you prepare the sauce.

Prepare the Mega Murphwich Sauce
Combine all the Mega Murphwich sauce ingredients in a medium bowl and stir until thoroughly mixed. Set the sauce aside.

If you are using the optional onion and red bell pepper, dice them now. Preheat a large skillet over medium heat. If you are serving fries or tots, start them according to their package directions.

Cook the Beef
Add 2 tablespoons of beef tallow or another high smoke point oil to the preheated skillet. If you are using the optional onion and red bell pepper, add them to the skillet and cook for 4 to 5 minutes, stirring occasionally, until the onion is translucent.
Add the beef and spread it into an even layer. Let it cook undisturbed until browned on the bottom. Flip the beef in sections, then break it into small crumbles and continue cooking until no pink remains and the internal temperature reaches 160°F. Drain any excess liquid if necessary.
Reduce the heat to medium low and pour in the sauce. Cook, stirring frequently, until the sauce is hot and thick enough to coat the beef. Turn off the heat, add 1/4 cup shredded Mexican cheese, and fold until the cheese is melted and evenly combined.
