These sandwiches are a HUGE hit in my house! They are so, so, so, so, gooooooood! You'll definitely be going back for seconds or thirds. On top of that they're simply to make and won't cost you an arm and a leg.
This meal is perfect for those hectic nights when you just don't know what to cook. You can whip these up and throw your favorite french fries in the oven and be done in 20 mins. Everyone will love them, I promise!
You can use any roll you like, but the softer and squishier the better in my opinion. I like to serve the Mega Murphwich on potato rolls like these here from pepperidge farms. They are my absolute favorite. Big enough to make a mega sandwich but still soft and squishy and a little bit sweet. Try them out, you won't be disappointed.

You'll see a couple of not so common ingredients included in this recipe. Specifically rice vinegar, mirin wine, and coconut palm sugar. These are ingredients that I always have in the cabinet. Yes they are a bit spicy. If you don't like spice then just cut back or eliminate the siracha sauce.
My favorite is seasoned french fries. But anything will really work, fries, sweet potato fries, tater tots, mac and cheese, etc.
Absolutely. You can make the chicken the day before and refrigerate it. It will stay fresh in the refrigerator for 3-4 days.
Definitely Delicious, Frighteningly Fast!
Slice each breast or tenderloin down along one side of the tendon. Then slice away the tendon from the other side and discard. Slice the chicken across the grain into 1/8" thick pieces place in a bowl. Drizzle a little avocado oil over the chicken and mix well.
Mix all of the Sauce ingredients together in a medium bowl. Set it aside.
Preheat your skillet on medium heat. This is also a good time to throw your fries or other sides in the oven!
Add 2 TBS of high smoke point oil to your preheated pan (I use avocado oil). Cook the chicken in batches, until just done through, being careful not to overcrowd the pan. When your last batch is done don't remove it from the pan. Instead, add all of the chicken back into the pan to reheat and continue cooking until it's all browned nicely but not overdone.
Add about 4 TBS of the sauce and combine with the chicken. Stir frequently and allow the sauce to thicken and caramelize on the chicken.
Reduce heat to medium/low and the rest of the sauce to the pan. Continue cooking, stirring frequently until all of the sauce is hot and starts to thicken a little. Turn the burner OFF then immediately add the shredded cheese, using a spatula to fold it into the mixture until fully combined.
Pile up a nice big heap of the mixture on your favorite hamburger bun. Toss some fries or tots on the plate and enjoy!
